New Year Brunch Recipes

Mmmm, brunch!  I am a big fan of brunch and all of the yummy dishes that go with it.  Last year I hosted a New Year’s Eve party and served brunch for dinner.  I think brunch is the perfect thing to serve for a New Year’s Day gathering or even a New Year’s Eve party.


In addition to some old favorites like waffles and pancakes, here are some New Year’s brunch recipes I served last year and loved.  Some of the recipes are even make ahead recipes which are perfect to prepare a day in advance so you have little prep to do the morning (or evening) of your brunch party.  Seriously, I’m getting hungry just thinking about these recipes!

Banana Bread:  I’ve made my reduced fat banana bread on many occasions and it is always hit.  It stores well so you can even bake it a day ahead of time.
 


French Toast Bake: I love this recipe for yummy French toast and the best part is that you make it ahead of time, refrigerate, and then just bake and serve in the morning (or whenever you’re ready for some yummy French toast goodness).

Herbed Edamame Frittata:  Eggs are a must have at any brunch and this frittata puts a tasty twist on a favorite staple.

Mini Cherry Cheesecakes:  Even brunch needs some dessert.  These mini cheesecakes are super easy, quick to prepare, and are absolutely delicious.
